The room service KPIs that actually matter
Digital room service produces data on its own, but unread data is decoration. These five numbers tell the whole story, and each feeds a concrete decision.
1. Orders per occupied room
The queen metric of adoption: how many orders each occupied room generates during its stay. If it rises after digitizing, the channel is capturing demand the phone used to lose. If it is flat, check the basics: is the QR visible? Does the menu have photos? Are the hours real?
2. Spend per stay
How much an average stay spends on F&B, from the first night to checkout. It is the number moved by suggestions, the night menu and scheduled breakfast. Read it by guest type: the weekend couple and the business traveler do not behave alike.
3. Mix per outlet
What share of consumption is born in the room, pool, spa or lobby. It reveals unattended appetite: a pool with full occupancy and low sales does not have a demand problem, it has a capture problem.
4. Peak ordering hours
The orders-per-hour curve tells you when to reinforce the kitchen and when a reduced menu is enough. It also reveals invisible sales: 11:30 pm orders that do not exist today because “the kitchen closed”, which a cold night menu would capture.
5. Time from order to door
From confirmed order to delivery. It is the promise KPI: guests forgive a simple dish, they do not forgive uncertainty. If the median grows, the problem is almost always at the pass or the delivery route, and the panel shows you which status it gets stuck in.
Adoption, spend, mix, hourly curve and delivery time. Five numbers, five decisions: everything else is decorative reporting.
